This Homemade Keto Mayo Recipe is my go to condiment in my house and part almost every low carb lunch that I make on the Keto Diet.

Ingredients
1egg yolk
3tbspapple cider vinegar
1/2lemonjuiced
1/2tspsea salt
1/4tsppaprika
1/4tspgarlic powder
3/4cupsavocado oil
Instructions
Start by adding the egg yolk, lemon juice, salt, apple cider vinegar, paprika, and garlic powder into the food processor.
Blend the ingredients for about a minute on high.
Once the ingredients are mixed, start slowly adding the oil to the spinning food process on high and allow each small amount to emulsify. Pour very very slowly - taking about 90 seconds to pour.
As you incorporate the oil, you will see the mixture get thicker and thicker, until it finally looks like mayo.
The mayonnaise is now ready to be used. Enjoy!
Store in the refrigerator for up to 4 days.
Notes
Note - Pull an egg out an hour or two before making the recipe. If you forget, You can warm up the egg by putting it in warm water for 10 minutes before you start.
