  • 1 head Cauliflower
  • 1/2 cup green beans
  • 1 red pepper
  • 1/2 yellow onion
  • 2 Green onions
  • salt
  • pepper
  • 2 tbsp coconut aminos
  • 2 tbsp avocado oil
  • 2 eggs


  • Break the eggs into a bowl and beat until combined.
  • In a frying pan, add avocado oil.
  • Scramble the eggs and set aside.
  • Clean the frying pan.
  • Dice the green beans, red peppers, and onions.
  • In the frying pan, start by adding avocado oil.
  • Then, add the red peppers and yellow onions.
  • Saute' for 10 minutes on medium until the onions are translucent.
  • Add crushed garlic. Saute for 2 minutes.
  • Then, add green beans. Cook for 2 minutes
  • Next, add the cauliflower rice, salt, pepper, and coconut aminios.
  • Mix the ingredients and cook for 2 minutes.
  • Serve hot with green onions to garnish.
