Start by taking your eggs out of the fridge to have them come to room tempature.
Butter the spring form pan on the sides and the bottom.
Then, line a spring form pan with parchment paper. Set aside.
In a mixing bowl, whisk together the eggs, sweetener, lemon juice, and lemon zest.
Preheat oven to 350 degres F.
In another mixing bowl, combine the almond flour and baking powder.
Pour. the dry ingreidents into the wet ingredients. Mix until combined and ingredients turn into a batter.
Pour the batter into the spring form cake pan.
Bake for 15 minutes.
Then, remove the pan from the oven and cover with aluminum foil and bake for another 45 minutes.
Let the cake cool for about 3 hours before icing it.
How to Make Lemon Frosting?
Set the cream cheese and butter out of the fridge so that it softens for about 20 minutes.
Add the cream cheese and butter to the stand mixer with the paddle attachement. Cream together the cream cheese and butter until they are mixed and fluffy.
You will need to scrape down the sides with a spatula.
Then, add the lemon zest and the monk fruit sweetener.
