Keto Egg Casserole

This Keto egg casserole is a yummy way to start the day when you have a busy week ahead. You can make this advance and heat it up later.

Ingredients

  • Non-stick cooking spray
  • 2 Tablespoon extra virgin olive oil
  • 3 Cups broccoli florets fresh or frozen (see notes in instructions)
  • 3 Tablespoons water
  • 1 Cup cheddar cheese
  • 6 slices thick-cut bacon cooked and crumbled
  • 4 eggs
  • ½ Cup heavy cream
  • ½ teaspoon onion powder
  • ½ teaspoon garlic powder
  • ¼ teaspoon dried thyme
  • ½ teaspoon dried oregano
  • Sea salt and black pepper to taste
  • Fresh parsley for garnish

Instructions

  • Start by pre-heat oven to 350°f.
  • Then, spray an 8” x 8” casserole dish with non-stick cooking spray. Set aside.
  • If using fresh broccoli, cut them into florets and add to a microwave safe bowl with 1/4 inch water at the bottom. Microwave for 2 minutes.
  • If you are using frozen broccoli, thaw on the counter or in the microwave.
  • Next, drain the broccoli and transfer broccoli to prepared casserole dish.
  • Spread out the broccoli into a uniform layer.
  • Then, top with shredded cheese.
  • Next, add a layer of crumbled bacon and side aside.
  • In a mixing bowl, whisk the eggs with the heavy cream, and spices - onion powder, garlic powder, thyme, and oregano.
  • Season with salt and black pepper, as desired.
  • Then, pour the egg mixture over the broccoli, cheddar, and bacon.
  • Bake for 15-20 minutes, or until the casserole is set and lightly golden brown on top.
  • Remove from oven and let cool for 10 minutes before slicing.
  • Sprinkle with fresh parsley and serve. Enjoy!
