This is a delicious Keto Meatloaf recipe that is stuffed to perfection with broccoli and cheese. Eat this for a low carb dinner every night!

  • 1.5 pounds ground beef
  • 1 cup broccoli
  • 4 oz cheddar cheese
  • 1/2 tbsp salt
  • 1/2 tbsp pepper
  • 1/2 tbsp garlic powder
  • 1/2 cup parmesan cheese
  • 1/3 cup almond flour
  • 1/2 tbsp parsley
  • 3 eggs


  • Preheat oven to 350 Degrees F.
  • In a large mixing bowl, add the ground beef with the eggs, garlic powder, parsley, almond flour, Parmesan cheese, and salt and pepper.
  • Spray the casserole dish with a nonstick spray or lightly oil or butter it.
  • Divide meat mixture so that you line the bottom of the casserole dish making about 1/2 inch of meat covering the bottom of the dish.
  • If using fresh broccoli, cut them into florets and add to a microwave safe bowl with 1/4 inch water at the bottom. Microwave for 2 minutes.
  • You can also buy broccoli in a steamer bag instead of fresh
  • Place all the broccoli on top of the first layer of the meatloaf. Leave a 1/4 inch lip around the area where the broccoli is layering to give space to cover the edges with the rest of the meat.
  • Cover the broccoli with cheddar cheese.
  • Cover the cheese and broccoli with the remainder of the meat mixture.
  • Put the meatloaf in the oven for 60 minutes checking on it for the last 10 minutes based on oven temperature variations.
