Keto Rice Pudding

One of my favorite things new low carb desserts is this Keto Rice Pudding with cinnamon and vanilla flavors.

  • 3 cups cauliflower rice
  • 1 cup almond milk
  • 3 tsp cinnamon
  • 1 egg white
  • 5 drops liquid stevia
  • 5 drops monk fruit


  • Start by adding 1/2 the cauliflower rice to large sauce pan so that it covers the bottom of the pan. Set the stove to medium heat.
  • Add the almond milk into the cauliflower rice. Mix the cauliflower and almond milk together so that it line the bottom of the pan.
  • Wait until the bubbles start and cover for 5 minutes.
  • Then, take the cover off and add the sweetener, the remainder of the cauliflower rice, and cinnamon.
  • Mix the everything together and let simmer uncovered for 5 minutes.
  • Next, take the pan off the heat and mix in the egg white so that it coats the cauliflower.
  • Add the pan back on the heat and keep stirring until the mixture thickens. It should take about 2 minutes.
