Lemons have very minimal carbs perfect for the Keto Diet. One lemon has about 5 carbs per fruit with 1.6 grams of fiber making the the net carbs only 3.4 carbs. Lemon is extremely healthy and good for you.
Keto Lemon Cake Recipe
Ingredients
- 5 Large Eggs
- 2 1/2 Cups Almond Flour
- 1/4 Cup Lemon Juice
- 1 Lemon, zested
- 1 tbsp baking powder
- 3/4 cup Monk Fruit
Lemon Cake Frosting Ingredients
- 1 Stick of Butter
- 4 oz cream cheese
- 1 Lemon, zested
- 1/3 cup Monk Fruit Confectionary Sweetener
Alternative Ingredients
You can also use coconut oil instead of butter to keep this recipe dairy free.
If you do not have fresh lemons, you can use other ingredients to get lemon flavor like lemon extract or lemon essential oil that is approved to be ingested.

How to Zest a Lemon?
Using a microplane or a grater, go in one direct against the lemon and do not grate the same spot twice.
You goal to grate the yellow zest off of the lemon and not grate the white pulp which is bitter.
How to Make Sugar Free Lemon Cake?
Start by taking your eggs out of the fridge to have them come to room temperature. Having everything that you are mixing together at the same temperature will make the cake fluffier.
Butter the spring form pan on the sides and the bottom.
Then, line a spring form pan with parchment paper. Set aside.
In a mixing bowl, whisk together the eggs, sweetener, lemon juice, and lemon zest.
Preheat oven to 350 degrees F.
In another mixing bowl, combine the almond flour and baking powder.
Pour the dry ingredients into the wet ingredients. Mix until combined and ingredients turn into a batter. Make sure that everything is incorporated but becareful not to overmix the batter at this point.
Pour the batter into the spring form cake pan. Using a spatula make sure that the top is smooth and level.
Bake for 15 minutes. Don’t open the oven to check during this 15 minutes because that could make the temperature uneven. Once the first 15 minutes are up, then you can safely remove the pan for the next step.
Then, remove the pan from the oven and cover with aluminum foil and bake for another 45 minutes. This prevents the top of the cake from becoming burned.
Let the cake cool for about 3 hours. After letting it cool I use a stainless steel circular cutter to cut off the edges. This should remove and over baked crust on the outside and expose the beautiful interior of the cake. Once that is done, and you confirm that the cake is cool, it’s time to ice it.
How to Make Lemon Frosting?
Set the cream cheese and butter out of the fridge so that it softens for about 20 minutes. This can be sped up if you dice up the cream cheese and butter into smaller chunks when you take it out.
Add the cream cheese and butter to the stand mixer with the paddle attachment. Cream together the cream cheese and butter until they are mixed and fluffy.
You will need to scrape down the sides with a spatula. This ensures that you are incorporating all of the cream cheese and butter together.
Then, add the lemon zest and the monk fruit sweetener. Continue mixing on a low speed until they are fully incorporated. Occasionally scrape down the sides of the bowl.
