These crispy almond flour crackers are the perfect snack for your Keto and Low Carb diet. They are easy to make with only 4 ingredients.

Almond Flour Crackers Recipe

We are constantly making bread and other recipes like Keto Macarons and regular macarons that only require egg whites.

The egg whites are needed to make this EASY Keto Bread Recipe and macarons the right consistency so that they are similar to the non-keto versions of the recipes.

Since I really hate waisting the egg yokes, I asked my husband to come up with a non-dairy cracker that I could eat. That is when he started testing this almond cracker recipe.

These almond crackers are made of the left over egg yokes.

How Many Net Carbs?

This is a grain free and gluten free cracker that have 3 net carbs for every 10 – 1 inch crackers. That is 5 carbs and 3 grams of fiber for 10 crackers.

These crackers were a game changer for me as they are a way to enable me to snack and eat dips.

Almond Flour Cracker Recipe

Ingredients

There are so few ingredients in this almond flour cracker recipe. Can you believe it is made with only 4 ingredients?:

  • 1 cup Almond Flour (or almond meal)
  • 3 Egg Yokes
  • 1/4 cup Unsweetened Almond Milk
  • 1 tsp Xanthan Gum (our favorite is Bob’s Red Mill)

Almond Flour

For this gluten free cracker recipe, your best bet is to use finely ground almond flour. This helps make the crackers more crispy.

If the flour is not finely ground already, you can put it in a food processor and purse until it is ground into a fine powder.

What is Xanthan Gum?

Xanthan gum is a relatively popular food additive that is commonly added to foods as a thickener or stabilizer.

It has become more popular as an additive for gluten free cooking.

It was discovered by scientists in 1963. Since then, it has been well researched and determined safe.

Therefore, the FDA has approved it as a food additive and placed no limitations on the amount of xanthan gum a food can contain.

The cool thing about Xanthan Gum for Keto and Low Carb purposes is that it is a soluble fiber. Soluble fibers are carbs that your body cannot breakdown.

That means that instead of the Xanthan Gum carbs being soaked up, they absorb water and turn into a gel-like substance in your digestive system, which slows digestion.

Therefore, your body is unable to digest xanthan gum, and it does not provide any calories.

Our Favorite Xanthan Gum

Xanthan gum is derived from sugar. The sugar can come from many different places, including wheat, corn, soy and dairy.

Bob’s Red Mill Xanthan Gum is a vegan and gluten free choice that you know will not bother you if you are trying to avoid dairy, soy, corn, or wheat.

People with severe allergies to these products may need to avoid foods containing xanthan gum unless they can determine what source the xantham gum came from.

How to Make Almond Flour Crackers?

Start by separating the egg yokes from the eggs.

In a mixing bowl, the egg yokes, almond flour, xanthan gum, and unsweetened almond milk using a spatula to combine ingredients.

As the ingredients come together, wet your hand to shape the dough into a ball.

Put the ball of dough onto the silicone mat and roll it out.

Roll the dough out as thin as possible. We were able to it out into about an 1/8 of inch thick. The thinner the better as this will make the crackers more crispy.

Us a dull butter knife (or the back of the butter knife) or dough scraper to cut the dough into 1 inch squares. *

NOTE: * You do not want to cut the silicone mat. It is very difficult to move the dough so we found that it is best to roll it out directly on the mat to prevent breakage.

Bake at 400 degrees F for 15 minutes or until they are lightly golden brown.

Let them cool on the pan.

Serve cooled and with your favorite dip.
