Cheeseburgers are one of my favorite foods. Since we are cutting carbs, the sesame seed bun just is not an option anymore.
Instead of serving the burger on a bun, we have turned the cheeseburger into a comforting soup that is filled with yummy cheese and burger!
I could eat this every single day of the week! This cheeseburger soup has become our favorite low carb dinner lately.
It is filled with so much delicious flavor from the ground beef to creamy cheese.
How Many Carb per Serving?
This keto friendly cheeseburger soup is only 3 net carbs per serving with 4 grams of carbs and 1 gram of fiber. It is the perfect keto dinner or keto lunch.

This awesome soup is low carb and keto friendly. It takes a little over 30 minutes to make on the stove top. I also added instructions on how to modify the recipe so you can make it in the slow cooker or instant pot.

I love mixing up recipes with different variations. It is fun to experiment with different ingredients especially after I have made a recipe a few times.
Here are a few ways to change up this low carb cheeseburger soup recipe.
- Meat: You can switch up the soup by using chicken, ground turkey or even sausage.
- Vegetables: You can add more vegetables. We have added mushrooms, bell peppers and canned tomatoes.
- Seasoning: You can add your favorite seasonings. If you like it more spicy, you can slowly add some red pepper flakes or paprika for a more heat. Here is my favorite place to buy spices.
- Cheese: You can you favorite cheese for this recipe. The sharp cheddar bring a good flavor, but you can use your favorite kind instead.
- Cream: You can swap the heavy cream for cream cheese or yogurt if you have it in the house.
- Broth: I like using bone broth for keto recipes. But, you can use beef broth, chicken broth, or vegetable broth as a substitute.

It tastes just the same as over the stovetop and has just as AMAZING flavoring.
Either recipe will be just that good!
How long does cheeseburger soup last?
This cheese based kind of soup does not freeze well. It is best to enjoy your keto bacon cheeseburger soup fresh!
You can store cheeseburger soup once it is completely cooled and put in an airtight container or ziplock bag.
The soup will keep in the refrigerator for 3 to 4 days.
When you reheat it, you might need to add broth to help breakup the thickness.
Can you freeze your cheeseburger soup?
Yes, kind of. It is best fresh and made to serve.
If you need to freeze this soup, wait until the soup is completely cooled, add your soup to a ziplock bag with excess air removed. Lay flat in your freeze.
This will last about 1 month. Freezing too long can separate the soup leaving it hard to reheat and combine back together.
Your best bet on reheating the soup is to put the unthawed frozen soup into a pot on the stove top on low or in a slow cooker.

How to Make Cheeseburger Soup?
Heat the Skillet: Start by heating a large high-sided skillet over medium heat.
Add Bacon: Then, add bacon and cook until crispy, approximately 6-7 minutes.
Transfer cooked bacon to a plate lined with paper towels and blot off excess grease.
Drain and discard bacon grease from skillet before returning to the cooktop.
Add Ground Beef & Spices: Next, add ground beef to the same skillet and sprinkle the onion powder, garlic powder, Italian seasoning, and paprika on top.
Season with salt and black pepper, to taste, and stir to combine.
Cook, stirring occasionally, until the meat is browned, approximately 5 minutes.
Add Cauliflower & Beef Broth: Then, add the chopped cauliflower and beef broth to the skillet and stir to combine.
Cover and reduce heat to medium low. Simmer until heated through and the cauliflower is fork tender, but not mushy, approximately 7-8 minutes.
When the cauliflower is fork tender, remove the skillet from heat.
Temper Heavy Cream: To prevent curdling, temper the heavy cream by adding one or two tablespoons of the hot liquid from the skillet to it.
Stir the tempered cream and sharp cheddar cheese into the skillet until the cheese is thoroughly melted. Taste and adjust seasonings, as desired.
To serve, ladle the soup into individual serving bowls.

Can you make cheeseburger soup in a slow cooker?
The great thing about this cheeseburger soup is that you can make it in the slow cooker.
If you want to start meal prep in the morning, then you can use the slow cooker do the job for you.
Start by adding the Ground Beef, Thick-cut bacon, Onion powder, Garlic powder, Italian seasoning, Paprika, Salt & Pepper, and a cut up head cauliflower with Beef Broth into the slow cooker.
Set the slow cooker to high for 4 hours or low for 8 hours.
After the cook time is over, temper the heavy cream by adding the broth to the cream.
Then, add heavy cream and cheese to the slow cooker to the crock pot. Stir to combine all ingredients.
Serve warm and top with additional cheese, bacon bits, and green onions.

Sounds great, except nobody in my house will eat cauliflower. Can you suggest a different option, or can it just be omitted?
