Low Carb Zucchini Slice you can make ahead for a Keto breakfast so you can eat it for the whole week. Our favorite Keto Breakfast meal come out perfect with Zucchini, cheese, and almond flour.
We made this Zucchini Slice the other day for breakfast and it was so GOOD. It is a super easy to make Keto friendly breakfast recipe that is extremely low carb and perfect for a make ahead recipe.

The zucchini slice is similar to a Keto bread in consistency. It is like a flat bread egg dish that makes eating breakfast in the morning so easy. To be honest, I have eaten it for lunch and dinner with low carb pesto mayo.
This is one of our favorite low carb breakfast foods besides the classic bacon and eggs. I was able to successfully make it with almond flour on the first try. I love this Keto breakfast recipe!
It is truly a family favourite and also can easily be added into lunch boxes as long as it has a cooler pack.

Zucchini Slice in the Oven
- Large Eggs
- Almond Flour
- Cheddar Cheese, grated or shredded
- Fresh Zucchini
- Salt and Pepper
- Avocado Oil spray
You can also add pre-cooked bacon or sausage to the mix as well. It tastes great in the dish. The zucchini and bacon are a perfect Keto combination.
Normally, zucchini slice has onions in it, but since onions are higher in carbs, I decided to skip them. If you want more flavor with zucchini onion bacon slice, you can add green onions to the dish. It tastes great with the additional ingredients.
How Many Carbs per Slice?
For this recipe, if you cut the dish into 12 pieces, each piece is 2 net carbs with 3 carbs and 1 gram of fiber.
You can cut the slices in a different method into squares to change the carb rate. You can make the change in the recipe card below to determine the exact carb count based on how many pieces you cut.
How Many Carbs in Zucchini?
There are 6 carbs in a medium size zucchini, but there are 2 grams of fiber to help make the net carbs only 4 net carbs for the entire zucchini. That is why zucchinis are on my Keto Friendly Veggie List.
How Long Can You Refrigerate?
You can refrigerate your baked zucchini slice for 3 to 4 days. After baking the zucchini, any leftovers must be refrigerated within 2 hours.
Can you freeze a Zucchini Slice?
You can freeze the breakfast dish for about 3 months. If you do not intend to eat the entire zucchini slice, you can put some it in an air tight container in the freezer.
Tools & Supplies
- Baking Sheet
- Parchment Paper
- Large Mixing Bowl
- Cheese Shredder/Grater or Mandoline (this is our ceramic blade mandoline -I’ve had for over 10 years and it is still perfect).
How to Slice Zucchini?
For this recipe, you will need to use a grater to grate the zucchini. If that is not available, you can use a mandoline to slice the zucchinis thin.
How to Make a Zucchini Slice Recipe?
Grate the Zucchini – Start by grating the zucchini into a large bowl.
Squeeze the Water Out – Then, in a kitchen towel add the zucchini and squeeze the water out of it.
Whisk Eggs – In a mixing bowl, whisk the eggs together.
Add Ingredients – Next, add the grated zucchini, almond flour, grated cheddar cheese, eggs, salt and pepper. Then, mix all the ingredients together until fully combined.
Prepare Baking Sheet – Cover the baking sheet with parchment paper and spray with avocado oil.
Add Mixture – Pour the mixture onto the parchment paper.
Cook– Set the oven to 350 degrees F. Bake for 30 minutes on the middle rack of the oven.
Serve – Finally, slice into squares or long rectangles for dipping and serve.
If you want to double the amount, you can make the zucchini slice a little thicker or just use a larger cookie sheet.
The small baking sheet that I used was not completely filled by this recipe. It was filled about 3/4 of the way to make the zucchini slice thicker. Normally, I spread the recipe across the whole cookie sheet and the final dish is a little thinner than the one in the picture.

Ingredients
- 6 eggs
- 1 cup almond flour
- 2 Cup Cheddar Cheese
- 3 Cups Zucchini grated
- Avocado Oil
Instructions
- Start by grating the zucchini into a bowl.
- Then, in a kitchen towel add the zucchini and squeeze the water out of it.
- Add the grated zucchini, almond flour, grated cheddar cheese, eggs, salt and pepper.
- Mix all the ingredients together until fully combined.
- Cover the baking sheet with parchment paper and spray with avocado oil.
- Pour the mixture onto the parchment paper.
- Set the oven to 350 degrees F.
- Bake for 20 minutes.
- Slice into squares or long rectangles for dipping and serve.
