Chicken thighs are not something that I normally buy. For the Keto Diet, I am always looking for higher fat options.
Now, that I have cooked with chicken thighs, I have realized that they are much more tasty choices over chicken breasts.
Chicken breast dry out quickly and it is much harder to cook it proberly without drying them out. After years of cooking, I choose chicken thighs over breasts every time.
The only way to get the chicken breast tenderized is to actually use a tenderizer to the chicken flat. If chicken breasts are all you have in the house, you can use the tenderizer to make it better suited for this recipe.

Mozzarella Chicken Bake
This baked chicken dinner is a great recipe for a family. The cook time is pretty low with only 10 minutes cooking the chicken on the stove and about 20 minutes in the oven.
This recipe is similar to a baked chicken caprese. If you love this recipe, you will love this chicken caprese.
- 3 Tbsp extra virgin olive oil, divided
- 2 lbs. boneless, skinless chicken thighs
- 1½ Tbsp Italian seasoning, divided
- Salt and pepper, to taste
- 3 Tbsp unsalted butter
- ¼ Cup chicken broth, preferably organic
- ½ Cup multi-colored cherry tomatoes, quartered*
- 8 oz fresh Mozzarella cheese, sliced
- ½ tsp red pepper flakes
- Garnish with with sprigs of fresh basil
Ingredients Swaps
This recipe has simple ingredients, but you easily do some ingredient swaps based on what you have in your pantry.
If you don’t have fresh tomatoes, you can use tomato sauce or marinara sauce.
You can use whatever tomatoes you prefer, I chose the ones that would bring some color to the dish. You eat with your eyes first.
If you do not have slice buffalo mozzarella, you can use shredded mozzarella.
Italian Seasoning is something that I always keep in the house. It is made with dried basil, dried oregano, dried rosemary, dried parsley, dried thyme, red chili flakes, and garlic powder.

How to Make One Pot Chicken Bake?
Start by preheating the oven to 425°F.
On the stove, heat 1 tablespoon olive oil in a large, oven-safe skillet over medium heat.
Then, rub the chicken thighs with the remaining olive oil and sprinkle both sides with one tablespoon Italian seasoning. Season with salt and black pepper, to taste, and transfer to the hot skillet.
Next, cook for 4-5 minutes per side, or until the chicken develops a golden crust.
Then, remove from heat and add butter, chicken broth, and cherry tomatoes.
Top each chicken thigh with a slice of fresh Mozzarella cheese and sprinkle with crushed red pepper flakes and remaining Italian seasoning.
Season with additional salt and black pepper, if desired.
Transfer skillet into pre-heated oven and roast for 15 to 20 minutes, or until
chicken is cooked through and the cheese is melted.
Remove from oven and allow chicken to rest for 5 minutes.
To serve, top chicken with some pan sauce and fresh basil sprigs, if desired.
Serve immediately with loaded cauliflower au gratin for a complete low carb high fat meal meal or your choice of sides. Enjoy!
