When you are on the Keto Diet, it’s easy to forget to eat your veggies. 

The key to eating veggies is to find low carbs choices that are Keto friendly. In this dish, you have broccoli, cabbage and some very thin carrots. 

Normally, I would say skip the carrots, but there is such a small amount that the carbs aren’t significant. 

For this broccoli slaw recipe, we used a bag of broccoli slaw that you can get in the salad area. It’s super easy to do it this way because you don’t have to shred anything on your own. 

If you are making another broccoli dish, like Beef and Broccoli where you are only using the florets, you can shred the stem for this slaw.

If you want to make fresh broccoli cole slaw, you will need fresh broccoli, cabbage, and carrots. 

This super quick broccoli slaw recipe is perfect for those nights  want a light and tasty side dish without pulling out another pot or pan. 

Just toss the ingredients into a large bowl and give it a quick stir to combine ~ and viola! 

You have a satisfying side dish or a crunchy filling for sandwiches or lettuce wraps, such as these delicious Slow Cooker Pulled Pork Lettuce Wraps. 

Planning Tip: You can serve this recipe immediately at room temperature. 

However, for best results, cover the healthy coleslaw and place in the refrigerator for a couple hours (or overnight) to give the flavors a chance to combine.

This easy low carb recipe has only 2 net carbs per serving even with the carrots in the broccoli salad.

Ingredients

  • 12 oz organic broccoli slaw 
  • ¼ cup fresh parsley leaves, chopped
  • 2 Tbsp avocado oil mayo
  • 1 Tbsp apple cider vinegar
  • 1 tsp whole celery seed
  • Salt and pepper, to taste

What’s in Coleslaw?

Normally, coleslaw has mayo, cabbage, vinegar, and sugar. You should not eat it when you eat out unless you know that there is no sugar added.

If you want to make this keto recipe a little sweet, you can add a few drops of sugar substitute like liquid stevia or liquid monk fruit.

You can also add some olive oil to give a little more of a Mediterranean flavor or to add fat.

Another ingredient swap can be lemon juice in place of vinegar.

How to Make Keto Broccoli Slaw?

Start by shredding the veggies. You will need mostly cabbage and broccoli stalk shredded and a minimal amount of carrots for a pop of color and nutrients with making it carrot and carb heavy.
