KETO Meatloaf Muffins Recipe

These yummy Keto Meatloaf Muffins are a great easy dinner that your whole family will love. You can make them in a muffin tin in the oven. 

These mini meatloaves are perfect for meal prep and helps you control your macros and calorie intake. I find it best to be able to lose weight when you keep track of your using an app on your phone.

The low carb meatloafs are gluten free made with ground meat in the oven in around 30 minutes.

Keto Meatloaf Muffins Recipe

Here are the ingredients for this yummy keto dinner recipe. You can get the full measurements for the mini meatloafs in the recipe card below.

  • Non-Stick Cooking Spray – I like to use avocado non-stick spray. I get my at Costco. Here are the rest of my favorite Keto items from Costco.
  • Ground Beef – I like to go for the 80/20 ground beef for the keto diet. It tastes so much better than the leaner ground beef. If you have not tried it, you need to.
  • Green Onion – We added some flavor to this recipe by adding some green onions to the mixture.
  • Celery – Since celery is a low carb vegetable, we added this into the meatloaf.
  • Eggs – The eggs are a huge park of keeping the meatloaf moist and helps with the texture.
  • Coconut Flour or Almond Flour – You can use coconut flour or almond flour to make this recipe.
  • Garlic Powder & Onion Powder – Make this meatloaf flavorful with these awesome spices.
  • Tomato Paste – Look for a low carb tomato paste. Most tomato paste has a few carbs, but a little goes a long way.
  • Italian Seasoning – Make this meatloaf extra tasty with a little Italian Seasoning.
  • Paprika – You can give your meatloaf a little zing with this paprika.
  • Salt & Pepper
  • Shredded Cheese

Note: Ground beef can be a bit dry and flavorless on its own. For this recipe, a small amount of finely chopped onion is added to remedy this.

As a result, some excess moisture will rise to the top of these meatloaf muffins as they bake.

This is normal and easily remedied by carefully draining off the excess moisture before adding the cheese as described in Step 4 below.

How to Make Meatloaf Muffins?

Start by preheating the oven to 375°F and spray muffin tin with non-stick cooking spray.

In a large bowl, thoroughly combine all ingredients together with your hands, except for the shredded cheese.

Divide beef mixture into 12 equal-sized portions and place into the prepared muffin tin openings.

Place the muffin tin in pre-heated oven for 20-25 minutes, or until the meat is cooked through.

Remove from oven and carefully drain excess moisture off the top of each muffin by gently tipping the tray over your sink.

Wipe excess liquid off top of muffin tin and top each muffin with the shredded cheese.

Return to oven for 5 minutes, or until cheese is melted and starts to turn golden brown.

Remove from oven and let cool for several minutes before removing muffins from tin. Serve immediately or freeze for later use. Enjoy!

Ingredients

  • lbs. ground beef 80%
  • ¼ cup green onion finely chopped
  • 1 cup celery finely chopped
  • 3 eggs
  • 2 Tbsp coconut flour
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • 1 Tbsp tomato paste
  • 2 tsp Italian seasoning
  • ½ tsp smoked paprika
  • Salt & Pepper to taste
  • ¾ cup cheddar cheese shredded

Instructions

  • Start by preheating the oven to 375°F and spray muffin tin with non-stick cooking spray.

    • Cake flour? That does not sound like it is Keto. Sounds like it is regular all purpose flour. I have not tried and it would not recommend.
