These keto zucchini fries are amazingly crispy and healthy fries alternative for those of us on a low carb diet.
You can make these low carb zucchini fries in the air fryer, oven, in a frying pan, or even a deep fryer. It is up to you! We have instructions for all of them with times.
All the cooking options taste great and it just depends what you are feeling that day. Personally, I am obsessed with air fryer because it is so easy and does not make a mess on my counter.
However, fried zucchini is very nostalgic for me and the smell and taste immediately brings me back to childhood.
Frying zucchini is an art in my house and I have been doing it for years with my mom. I would sit on the counter and watch her fry zucchini in a frying pan with 1/4 inch of oil.
They disappeared as fast as she could fry them especially on Sunday in an Italian household.

Slicing and Breading Instructions
Cut the Zucchini – Slice off the edges of the zucchini. Then, slice the zucchini in half.
Cut each half into 8 fries. You should get 16 fries from each zucchini.
Set the zucchini in a colander over a paper towel to catch water from the zucchini.
Then, add a tablespoon of salt.
Mix the zucchinis with your hands or a large spoon to help the coat the zucchinis with salt.
Wait 20 minutes to let the moisture of the zucchinis get pulled out. This helps make the zucchinis more crispy.
Pat the zucchinis with a dry towel or paper towel to remove excess water and some of the salt.
You can even rinse the zucchinis and pat dry if salt is a concern.
In a small bowl, add 1 egg per zucchini.
In a plate or shallow bowl, add 1/2 cup of grated parmesan cheese.
With one hand, grab the zucchini and dip it into the egg wash. Let the egg drip off and add it to the parmesan plate.
With the other hand, pat the cheese into the zucchini.
To Air Fry Zucchini
Lift it with the designated cheese hand and add it to the air fryer basket. Keep the zucchinis spread apart in a single layer so that they are not touching.
Set the air fryer to 375 degrees F for 15 minutes.
Flip the zucchini fries over at the 10 minute mark.
Serve Immediately.
To Bake the Zucchini Fries
Follow all the breading instructions above.
Preheat the oven to 450 degrees F.
Place zucchini onto a baking sheet with space in between each fry.
Bake in the oven for 20-22 minutes or until golden brown and crisp.
Serve immediately.
To Deep Fry Zucchini
Start by heating oil to 325 F to 350 F in a deep fryer.
Drop coated zucchini only a few at a time into the hot oil and cook until lightly browned about 1 minute on each side
Set on a paper towel lined plate.
Serve immediately.
