These yummy Keto Zucchini Fritters are an easy way to get vegetables to taste delicious while one the Keto Diet.

A few weeks ago I accidentally bought a massive amount of zucchinis. I thought I was buying 4 zucchinis, but instead I was buying 4 packs of 3 zucchinis giving us a whopping 12 zucchinis. Needless to say, we at a ton of zucchini for weeks.

Something positive came out of it, I got to make tons of keto zucchini recipes like: KETO Zucchini Fries in Air Fryer and LOW CARB Zucchini Slice Recipe.

Zucchinis are great choice for the Keto diet or a low carb diet because they are extremely low in carb with only 4 net carbs for a medium zucchini.

Since being in Ketosis and skipping the carbs can leave your body lacking magnesium and potassium on the Keto diet. I am not a Doctor and cannot give medical advice.

If you are looking for a way to supplement your Keto Diet with magnesium and potassium on the Keto Diet, zucchini is a great choice.

Zucchinis have many valuable minerals, like calcium,  phosphorus, iron, magnesium, and potassium. They also have tons of vitamins like vitamin A, vitamin C, vitamin K, and folic acid. Also, they contain antioxidants, as well.

These zucchini fritters are a great alternative to bread or a bagel since they are can be vehicles for toppings like sour cream, tatziki, ranch dressing, buffalo dip and tons more!

Here are the ingredients that we used to make the low carb zucchini fritters. If you want the full amounts needed for the recipe, scroll down to the printable recipe card below.

Zucchinis – Zucchini is a summer squash that is treated as a vegetable, but technically zucchini is a fruit. We leave the zucchini skin on as it fiber and nutrients and is tender and mild. There is no need to remove it and add extra work to the prep cooking.

Eggs – The eggs in the zucchini fritters help keep them together without breaking apart. They act as bonding agent, but you do not want to use too much that the fritters take on an egg flavor rather than a fritter flavor. It is a balance to get the flavor profile right.

Parmesan Cheese – Grated Parmesan cheese is another bonding agent that helps keep the fritters together. The flavor added with the cheese also helps greatly. When you can, fresh grated parmesan cheese is the best choice for this recipe.

Parmesan grated into a bag at the grocery story has an anti-caking agent and preservative to prevent it from sticking together. However, the sticking is exactly what we need here to help the zucchini fritters stay together.

Garlic Cloves – Fresh grated garlic cloves are a great choice for flavor in the zucchini fritters. You can skip this if you are not interested in a garlic flavor. It is truly yummy and I would suggest keeping it in.

Almond flour – You can use almond flour or coconut flour or a mix of both. They help keep the zucchini fritters together so that the do not break apart while cooking or eating. If you use coconut flour, there will be a hint of coconut flavor. It is up to you whether that is your taste preference.

Scallions – The finely chopped scallions add a nice mild onion flavor to the almond flour zucchini fritters.

Salt – To help the zucchinis release some of the water, you will need to salt them and allow them to rest before making the fritters. Salt is the key to success in this recipe. A water filled zucchini will not make a good fritter. See the instructions below on how to release the water from the zucchinis.

Zucchini are fairly delicate, so handle them with care. Keep them in an opened plastic bag in your refrigerator’s crisper, and eat soon after purchase.

Zucchini are definitely allowed on the Keto diet because they are low carb and are mostly water.

Yes, there are carbs in zucchini, but the amount is small in comparison to other vegetables. It is on of the best vegetables for the Keto Diet .

How Many Carbs in a Zucchini?

In one medium zucchini, there are 6 grams of carbs and 2 grams of fiber netting out to 4 grams of carbs per zucchini squash.

How Much Zucchini Can I Have On Keto?

If you keep your carbs to a minimum with the other foods in your daily intake, you can have several zucchinis in a day. They only net to 4 grams of carbs per day. That means you can have 5 zucchinis in a day with all other net carbs netting zero in a day on a 20 carb per day Keto diet.

Why are My Zucchini Fritters Falling Apart?

We use egg and almond flour to help keep the zucchini fritters together. You might be using a good bonding agent like these foods or your zucchinis might be too wet. You need to salt them and squeeze out the water.

How to Make Zucchini Fritters?

Starting by grate the zucchini into a cheese cloth or cloth napkin in a bowl or colander. Add salt on top of the zucchini and mix to coat.

Then, allow the zucchini to release the water and sit on the napkin for 10 minutes.

Wrap the napkin up into a ball and squeeze the water out of the zucchini over a bowl or the sink.

Empty the water out of the bowl.

Add the eggs to the bowl and whisk them together.

Then, add the zucchini back into the bowl and mix.

Next, add the grated garlic, diced scallions, and black pepper. You will not need to add salt since the zucchini was already coated in it.

Finally, add the almond flour into the mix until everything is fully combined.

Pre-heat the air fryer to 375 degrees F for a few minutes so that the fritters do not stick or use spray oil. 

Then, add the zucchini to the mixing bowl with all the other ingredients.

Mix together with a spatula until fully incorporated. 

Make into burger type patties and add to the air fryer. 

Flip in the air fryer at the 10 minute mark. 

Serve with sour cream and green onions on top. 

How to Cook Zucchini Fritters Stovetop?

Preheat a large pan on the stove to medium-high heat. Add 1 tablespoon oil.

Using an ice cream scoop or large spoon, scoop batter into the pan and cook 2-3 minutes per side until golden crispy and cooked through.

Transfer to a paper towel-lined pan and repeat.

  • 1/4 Parmesan Cheese
  • 1 Garlic Cloves, grated
  • 1/2 cup Almond flour
  • 2 Scallions, finely chopped
  • 1 teaspoon salt

Instructions

  1. Grate the zucchini into a cheese cloth or cloth napkin in a bowl. Add salt on top of the zucchini and allow to sit on the napkin for 10 minutes.
