My mom has been making a gluten free version of this stuffed meatloaf for years. She usually makes it with her rice flour, but I decided to give almond flour a try to make it Keto Friendly. I was pleasantly surprised by how amazing it tastes.
You can easily make a large low carb meatloaf and eat it throughout the week on the Keto Diet. That’s what we do. It reheats really well and tastes just as delicious reheated.
Keto Meatloaf Recipe
Ingredients
- 1.5 pounds ground beef
- 1 cup broccoli
- 3 eggs
- 4 oz cheddar cheese
- 1/3 cup almond flour
- 1/2 cup grated parmesan cheese
- 1/2 tbsp salt
- 1/2 tbsp pepper
- 1/2 tbsp garlic powder
- 1/2 tbsp parsley
Alternative Ingredients
You can add onion powder to give a little onion spice to this meatloaf. My husband cannot have onion powder so we usually skip it.
Green onions don’t bother him which is really nice because green onions are the most Keto friendly.
You can swap out coconut flour for almond flour in this recipe as well. You can do half coconut flour and half almond flour or all of either of them.

How to Make Keto Stuffed Meatloaf?
Preheat oven to 350 Degrees F.
In a large mixing bowl, add the ground beef with the eggs, garlic powder, parsley, almond flour, Parmesan cheese, and salt and pepper.
Make sure not to over mix the meatloaf as it can result in a tough and dense meatloaf
Spray the casserole dish with a nonstick spray or lightly oil or butter it.
Divide meat mixture so that you line the bottom of the casserole dish making about 1/2 inch of meat covering the bottom of the dish.
If using fresh broccoli, cut them into florets and add to a microwave safe bowl with 1/4 inch water at the bottom. Microwave for 2 minutes.
You can also buy broccoli in a steamer bag instead of fresh broccoli.
Place all the broccoli on top of the first layer of the meatloaf. Leave a 1/4 inch lip around the area where the broccoli is layering to give space to cover the edges with the rest of the meat.
Cover the broccoli with cheddar cheese.
Cover the cheese and broccoli with the remainder of the meat mixture. Gently press meat into the pan so it holds its shape.
Put the meatloaf in the oven for 60 minutes checking on it for the last 10 minutes based on oven temperature variations.
Finally, let the meatloaf rest for 10 minutes before slicing.
NOTE – Save the juices from the pan and pour over the sliced meatloaf before serving.
Can you Freeze Keto Meatloaf?
Yes, you can make meatloaf ahead of time and put it in the freezer until you need it. To do this, just make the meatloaf like normal, up until the “baking” step.
Instead of baking it, seal it with aluminum foil and label it with the recipe name and date. It will last in the freezer for about 3 months.
When you are ready to bake it, just take it out the night before and put it in the refrigerator. Then, bake it at 355 degrees F for about an hour. Yum!
You can also freeze the meatloaf after Cooking. Once the meatloaf is cooked and cooled, you can freeze the individual slices of the meat on a parchment-lined pan.
Once the meat is frozen, you can transfer to a freezer bag. Cutting the meat in advance makes it easy to grab the right amount and heat it up properly. I find when I freeze it whole, I never end up eating it.
You can reheat the meatloaf in the microwave or in the oven.
