Pork Shoulder Alternatives
For this recipe, don’t substitute a leaner cut of pork. The pork shoulder is the ideal Keto choice because it will release lots of juices and fat making the meat will be extra tender and flavorful.
Bone Broth Alternatives
For this recipe, we chose to use chicken bone broth because it is packed with tons of awesome nutrients that are perfect for the keto diet.
You can also swap in chicken broth, chicken stock or even beef broth and beef stock or beef bone broth. It is really up to you.
Also, if you don’t have any of these, you could always use water and throw in a little fat like butter or oil.
Spice Alternatives
For this recipe we chose to put together a spice group together that brings out the flavor the pork.
You can also choose to make the pork with Mexican spices like coriander, cumin, garlic powder, dried oregano, bay leaf, chili pepper, and onion powder.

How to Make Keto Pulled Pork in Slow Cooker?
Start by combing all spices (garlic powder, onion powder, rosemary, paprika, cayenne pepper, ground fennel) and the cocoa in a small bowl.
Then, add salt and black pepper, to taste.
Next, rub the spice mix all over the pork shoulder.
Transfer to a 5 or 6-quart slow cooker crock.
Add the chicken broth to the crock and cook on high for 4 hours or on low for 6.
Once the cooking time is complete, use two forks to pull the pork apart while it is still in the slow cooker crock.
Allow the pulled pork to remain in the juices with the slow cooker set to “warm” for 20-30 minutes to absorb more flavor.
To serve, fill each lettuce leaf with some crunchy broccoli slaw and top with some pulled pork. Enjoy!
How to Make the Low Carb Pork in the Instant Pot?
Start by combing all spices (garlic powder, onion powder, rosemary, paprika, cayenne pepper, ground fennel) and the cocoa in a small bowl.
Then, add salt and black pepper, to taste.
Next, rub the spice mix all over the pork shoulder.
Then, select Saute to preheat the pressure cooker.
When the pressure cooker is hot, spray oil on the bottom of the pot.
Then, add the pork shoulder into the pressure cooker pot to brown both both sides. You should do it for about 3 minutes per side.
Make sure to brown each side side of the pork shoulder.
Then, remove the pork shoulder from the pressure cooker.
Add the bone broth to the pressure cooking pot.
Stir to combine the browned bits and the bone broth.
Then, add the browned pork shoulder and juices to the pot.
Add the pressure cooker lid on and lock the lid in place. Close the vent.
Select High Pressure and set the cook time for 75 minutes.
When the cook time ends, turn off the pressure cooker allow the pressure to release naturally. This should take approximately 20 minutes.
When the pressure valve drops, you can carefully remove pressure cooking lid.
Then, use two forks to shred the meat.
Allow the pork to sit on warm with the lid off for 20 minutes to let the juices sink into the meat.
Strain excess liquid.
Serve on lettuce cups or on low carb tortillas.
